Unassigned Work Orders should always show the next business day even when nothing is currently scheduled.

When viewing the Unassigned work orders, when a job gets moved a day later and you can drag a job down to reschedule for the next day, If that day doesn't already have any jobs assigned, then that day isn't available and you must edit the job or change to calendar view. Each day of the work week should be on the unassigned column, even if no jobs are scheduled, especially while using the "Work Order Type" filter function.
